Ingredients

Scale
  • 1 head romaine lettuce, chopped
  • ½ medium red onion, chopped
  • 1 ½ cups corn
  • 1 ½ cups black beans, drained
  • ¼ cup bbq sauce
  • ¼ cup plain yogurt
  • 2 t apple cider vinegar
  • salt and pepper to taste

Instructions

  1. Chop the romaine lettuce into bite-sized pieces and place it in a salad bowl or on a platter.
  2. Layer the chopped onion, corn, and black beans on top of the romaine. Set this aside for now.
  3. In a small bowl, prepare the salad dressing by mixing together BBQ sauce, plain yogurt, apple cider vinegar, salt, and pepper. Whisk until creamy and well combined.
  4. Right before serving, drizzle the dressing over the salad and gently toss everything together using tongs.
  5. Serve and enjoy your delicious salad!

Notes

This salad is best served fresh but can be prepared ahead of time without the dressing to keep it crisp.
Feel free to customize with additional veggies or toppings like avocado or chopped herbs!
