Ingredients

Scale
  • ½ English cucumber
  • 1 cup Greek yogurt plain
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill chopped
  • 1 clove garlic grated
  • ¼ teaspoon ground white pepper or black pepper
  • salt to taste

Instructions

  1. Grate the cucumber finely using a box grater. Place it in a bowl or on a platter and sprinkle with salt. Allow to rest for 10-15 minutes, letting the salt extract excess moisture.
  2. In a separate bowl, combine all other ingredients.
  3. Drain the moisture from the cucumber using a cheesecloth or strainer and discard the liquid.
  4. Mix the drained cucumber into the bowl with the other ingredients and stir until well combined. Adjust salt and pepper to taste.
  5. Serve immediately or store in an airtight container in the fridge for 3-4 days.

Notes

Using freshly grated garlic enhances the flavor.
Allowing the cucumber to rest with salt helps achieve the desired texture in the tzatziki.
