Ingredients
Scale
- 2 tablespoons butter, melted
- 1 cup cooked and pureed sweet potato
- 3/4 cup brown sugar
- 1/2 cup almond butter (use a natural and runny almond butter)
- 1 egg
- 2 teaspoons vanilla bean paste
- 1/4 cup all-purpose flour
- 1/2 cup unsweetened dutch-process cocoa powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon espresso powder
- 1/2 cup chocolate chips
- Flaky sea salt for sprinkling on top of the brownies (optional)
Instructions
- Preheat the oven to 350°F (175°C) and prepare a baking pan by lining it with parchment paper, lightly misting the bottom with cooking spray.
- Melt the butter in a large mixing bowl, then add the sweet potato puree, brown sugar, almond butter, egg, and vanilla bean paste. Whisk until fully combined.
- In a separate bowl, sift the flour and cocoa powder to eliminate lumps. Add the baking powder, kosher salt, and espresso powder, and whisk together.
- Combine the dry ingredients with the wet ingredients, mixing with a rubber spatula until just incorporated. Gently fold in the chocolate chips and spread the batter into the prepared pan, smoothing the top.
- Bake for 23-28 minutes until the edges are set. A toothpick inserted into the center should come out with moist crumbs attached but not raw batter. Optionally, sprinkle flaky sea salt on top before serving.
- Allow the brownies to cool in the pan for 20-30 minutes before transferring to a wire rack to cool completely. For easier cutting, chill in the fridge for 1-2 hours.
Notes
Ensure the sweet potato is well pureed for a smooth batter.
Allow the brownies to cool before slicing for cleaner edges.
Storing brownies in an airtight container keeps them fresh longer.
