Ingredients
Scale
- ½ cup salted butter , softened
- ¼ cup light brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1 cup graham cracker crumbs
- 7 ounce container marshmallow creme
- 4 hershey chocolate bars (1.5 ounce each)
- ½ cup mini marshmallows , plus a few more for the top
Instructions
- Preheat oven to 350°F and lightly grease a 9" pie pan (use regular, not deep dish).
- In a large bowl, beat together the butter, brown sugar, and granulated sugar until smooth. Mix in the egg and vanilla until just combined. Stir in the flour and graham cracker crumbs until well mixed. Press 2/3 of the dough into the bottom and up the sides of the pan.
- Spread the marshmallow creme evenly over the bottom of the crust. Place chocolate squares on top (save 1 bar for topping), and sprinkle mini marshmallows on top.
- Flatten the remaining dough into small 2-inch disks and lightly press them over the top of the marshmallows, allowing some to peek through.
- Bake for 13 minutes. Add more marshmallows and the remaining chocolate bar on top, plus broken graham cracker pieces if desired. Bake for another 5-7 minutes until marshmallows are toasted, broiling the last minute if needed.
- Let cool for at least 30 minutes before slicing into 8 pieces.
Notes
For a richer flavor, use dark chocolate instead of milk chocolate.
Allowing the pie to cool is essential for better slicing.
The mini marshmallows can be added at different stages for varied textures.
