- ⅓ cup water
- 1 (23oz.) jar salsa con queso dip
- ¼ cup pickled onions
- ¼ cup pickled jalapeno slices
- 1 cup shredded cheddar cheese
- ¾ cup cherry tomatoes
- ½ cup sour cream
- chopped cilantro or green onions
Instructions
- Preheat the oven to 350°F and prepare two rimmed baking pans.
- Spread the tortilla chips evenly on one baking sheet.
- In a skillet, cook the ground beef over medium heat for 3 to 4 minutes, breaking it up as it browns.
- Add the diced yellow onion and cook for another 4 to 5 minutes until the beef is fully cooked and the onion is tender; drain excess grease.
- Mix the taco seasoning and water into the beef, cooking for 1 to 2 minutes until coated and moist.
- On the second baking pan, spread the salsa con queso dip evenly.
- Top the cheese dip with the beef mixture, followed by pickled onions, jalapeño slices, and shredded cheddar cheese.
- Bake for 8 to 10 minutes until the cheese has melted.
- Slide the cheesy mixture onto the tortilla chips and top with cherry tomatoes, sour cream, and garnishes.
Notes
Feel free to substitute ground turkey or chicken for the beef if you prefer a lighter option.
Make it your own by adding your favorite toppings like guacamole or olives.
For a spicier kick, consider using spicy salsa or additional jalapeños.
