Ingredients
Scale
- 1 lb. ground turkey
- 10 oz. can diced tomatoes with green chilies (drained)
- 1 tsp chili powder
- 1 tsp ground cumin
- ½ tsp garlic powder
- ½ tsp smoked paprika
- ½ tsp salt
- 12 small corn tortillas (taco size)
- 1 cup Monterey jack cheese (shredded)
- 1 cup refried beans
- 2 Tbsp vegetable oil
- ½ cup sour cream
- 1 tsp lime juice
- ½ tsp chili powder
- ¼ tsp smoked paprika
- ¼ tsp garlic powder
- ⅛ tsp salt
- ½ tsp honey
Instructions
- Preheat the oven to 425°F.
- Wrap the corn tortillas in a damp paper towel and microwave for 20 seconds to soften them.
- In a large bowl, mix together the ground turkey, drained diced tomatoes, chili powder, cumin, smoked paprika, garlic powder, and salt until combined.
- Line a baking sheet with parchment paper and drizzle with vegetable oil. Place the tortillas on the sheet and lightly coat both sides with oil.
- On one half of each tortilla, spread 2–3 tablespoons of the turkey mixture, pressing lightly to flatten.
- On the other half, add a thin layer of refried beans.
- Sprinkle shredded cheese on top and fold the tortillas so the meat and beans are on opposite sides. Press to seal them lightly.
- Bake for 25-35 minutes, flipping halfway, until the turkey is cooked through and the tortillas are golden and crispy (165°F internally).
- While baking, whisk together sour cream, lime juice, chili powder, smoked paprika, garlic powder, salt, and honey until smooth.
- Serve warm, accompanied by the dipping sauce and your choice of toppings.
