Ingredients

Scale
  • 8 oz. freshly shredded extra-sharp cheddar cheese
  • 4 oz. freshly shredded pepper jack cheese
  • 1½ tbsp cornstarch
  • 12 oz. evaporated milk unsweetened
  • 2 tsp hot sauce optional, such as Frank’s*

Instructions

  1. In a medium, heavy-bottom saucepan over low heat, combine the cheese and cornstarch, tossing to mix well.
  2. Pour in the evaporated milk and hot sauce, whisking constantly until the cheese melts and the mixture thickens, about 5 minutes.
  3. If the cheese thickens too much, stir in additional evaporated milk to reach desired consistency.
  4. Serve the cheese sauce immediately.

Notes

For a spicier kick, add more hot sauce to taste.
Make sure to use freshly shredded cheese for the best texture and flavor.
This sauce can be served immediately or kept warm over low heat.
