  • Yield 2 servings 1x

Ingredients

Scale
  • 1 lb 80/20 ground beef
  • Kosher salt to taste
  • freshly cracked black pepper to taste
  • 10-12 oz cremini or button mushrooms sliced
  • 1½ tablespoons butter
  • Pinch kosher salt
  • 1 teaspoon fresh thyme leaves
  • Splash beef broth or a few drops Worcestershire sauce
  • 2 slices swiss cheese
  • 2 brioche or pub rolls split and buttered
  • Butter or oil for toasting
  • 1 cup beef broth
  • Salt and black pepper to taste

Instructions

  1. Divide the ground beef into two equal portions and handle as little as possible to maintain juiciness.
  2. Shape each portion into rounds about ¾–1 inch thick, making a dimple in the center of each patty.
  3. Season the patties with kosher salt and freshly cracked black pepper just before cooking.

Notes

Ensure not to overwork the beef to keep the burgers tender.
You can substitute button mushrooms with cremini for a deeper flavor.
Toast the brioche rolls in butter or oil for added richness.
