Ingredients
Scale
- 1 lb. ground beef (80/20 preferred)
- ⅓ cup italian breadcrumbs
- 1 large egg
- ¼ cup whole milk
- ½ small onion (finely diced)
- 3 tsp worcestershire sauce (divided)
- ½ tsp garlic powder
- ¾ tsp salt (divided)
- ½ tsp black pepper (divided)
- ½ cup ketchup
- 1 tbsp brown sugar
- 1 tsp yellow mustard
- 1 lb. russet potatoes (peeled and diced)
- 2 tbsp salted butter
- ⅓ cup whole milk
- 1 cup cheddar cheese (shredded)
- 2 green onions (thinly sliced)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease an 8×8-inch baking dish.
- In a medium bowl, mix together the ground beef, breadcrumbs, egg, milk, diced onion, garlic powder, 1 tsp Worcestershire sauce, ½ tsp salt, and ¼ tsp black pepper until well combined.
- In a small bowl, whisk together the ketchup, yellow mustard, brown sugar, and the remaining 2 tsp Worcestershire sauce. Set aside.
- Press the meat mixture into the bottom of the prepared baking dish.
- Spread half of the ketchup mixture on top of the meat and bake uncovered for 25-30 minutes or until the internal temperature reaches 160°F.
- While the meat is baking, place the diced potatoes in a pot, cover with cold water, add a pinch of salt, and bring to a boil. Simmer for 12-15 minutes until tender, then drain.
- Mash the cooked potatoes with butter, the additional milk, ¼ tsp salt, and ¼ tsp black pepper until smooth and creamy.
- After the initial bake, brush the remaining ketchup mixture over the meatloaf.
- Spread the mashed potatoes on top of the meatloaf and sprinkle with shredded cheddar cheese. Return to the oven and bake for an additional 10-12 minutes until the cheese is melted and slightly golden. Optionally, broil for 1-2 minutes for a browned top.
- Sprinkle with sliced green onions and let rest for 5 minutes before slicing.
Notes
For added flavor, consider using seasoned breadcrumbs instead of plain ones.
Allow the casserole to cool slightly to help it set for easier slicing.
Feel free to add vegetables like peas or corn into the mashed potatoes for extra nutrition.
