Ingredients

Scale
  • 1/2 cup mayonnaise
  • 1 tablespoon white miso paste
  • 2 tablespoons Parmesan grated
  • 1 tablespoon lemon juice fresh
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 clove garlic minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 1/2 lbs salmon skin removed, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons unsalted butter
  • 2 cloves garlic minced
  • 3 tablespoons hot honey
  • 1 tablespoon soy sauce
  • 1 tablespoon lemon juice fresh
  • 2 romaine hearts chopped
  • 1/3 cup Parmesan shaved
  • 1 1/2 cups croutons

Instructions

  1. Whisk together the mayonnaise, white miso paste, grated Parmesan, fresh lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, salt, and pepper until the mixture is smooth.
  2. Gradually drizzle in the olive oil while whisking, until fully emulsified. Refrigerate the dressing until needed.
  3. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Toss the salmon pieces in a bowl with olive oil, kosher salt, black pepper, and paprika until evenly coated. Spread the salmon on the baking sheet and bake for about 15-20 minutes until cooked through and flaky.
  5. In a skillet over medium heat, melt the unsalted butter and sauté the minced garlic for about 1-2 minutes until fragrant.
  6. Stir in the hot honey, soy sauce, and fresh lemon juice, mixing thoroughly before adding the cooked salmon. Cook for an additional couple of minutes, allowing the salmon to absorb the flavors.
  7. In a large bowl, combine the chopped romaine hearts, shaved Parmesan, and croutons. Toss with the prepared dressing and top with the honey-glazed salmon.
