Ingredients

Scale
  • 225 g ripe bananas, about 2 medium-size, ideally 210-240 grams mashed bananas
  • 150 g brown sugar (¾ cup), packed
  • 113 g salted butter (½ cup), melted, slightly cooled
  • 2 large eggs, room temp
  • 60 g sour cream (¼ cup), or Greek yogurt or plain yogurt
  • 195 g all-purpose flour (1 ½ cup)
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • ¼ teaspoon baking powder
  • 8 g hojicha powder (4 rounded teaspoons)
  • 10 g maple syrup (½ Tablespoon)

Instructions

  1. Preheat the oven to 350°F and grease a 9×4-inch loaf pan, optionally lining with parchment paper.
  2. In a large bowl, mash the bananas together with brown sugar, then mix in melted butter, eggs, and sour cream until well combined, even if it looks a bit curdled.
  3. In another bowl, whisk together the flour, baking soda, salt, and baking powder.
  4. Combine the dry ingredients with the wet mixture and stir until just combined.
  5. Set aside 300 grams of batter in a separate bowl. Sift the hojicha powder into this portion and add maple syrup, mixing until well incorporated.
  6. In the prepared loaf pan, alternate layers of banana batter and hojicha batter, smoothing the top with a spatula or spoon.
  7. Bake for 50–60 minutes, rotating the pan halfway, until a toothpick inserted in the center comes out clean. Tent with foil if the top browns too quickly.
  8. Let the bread cool in the pan for 10 minutes before transferring to a wire rack. Cool completely before slicing.

Notes

Ensure all ingredients are at room temperature for the best mixing results.
Feel free to substitute the sour cream with Greek yogurt or plain yogurt as per your preference.
Store leftover banana bread in an airtight container to maintain freshness.
