  • Prep Time 15 minutes

Ingredients

Scale
  • 6 large eggs
  • 1 cup egg whites
  • 12 ounces turkey breakfast sausage
  • 1 red bell pepper diced
  • 1 yellow onion diced
  • ½ teaspoon garlic powder
  • salt and pepper to taste
  • 6 large low carb tortillas
  • 6 ounces shredded pepper jack cheese

Instructions

  1. Heat a nonstick ceramic skillet over medium-high heat.
  2. In a separate bowl, whisk together the eggs and egg whites. Pour into the heated skillet and cook for 3-5 minutes, stirring continuously until scrambled and just cooked.
  3. Transfer the scrambled eggs to a plate and refrigerate to cool down quickly.
  4. In the same skillet, add the turkey sausage, breaking it into smaller pieces as it cooks for 4-6 minutes. Drain any excess fat or liquid if necessary.
  5. Add the diced peppers, onions, garlic powder, salt, and pepper to the sausage. Sauté for about 3-4 minutes until the vegetables are tender.
  6. Transfer the sausage and veggies to a plate and refrigerate for at least 30 minutes to cool down, preventing steam buildup in the burrito.
  7. Lay the tortillas flat and begin assembling the burritos with layers of shredded cheese, scrambled eggs, and the sausage-vegetable mixture. Fold the sides and roll up the burrito tightly.
  8. For immediate enjoyment, heat the burritos in a skillet until warm and toasty on both sides, then serve.
  9. For meal prep, wrap the burritos in foil, label them, and store in the fridge or freezer. Reheat when ready to eat.

Notes

Ensure all cooked components have cooled before assembling to avoid soggy burritos.
Feel free to customize fillings with your favorite vegetables or proteins for variation.
Use low carb tortillas to keep the burritos healthier while still satisfying.
