Ingredients
Scale
- 1 lb ground beef, preferably 85/15
- 1 small yellow onion, or white onion, finely diced
- 2 garlic cloves, minced
- 1 Tbsp tomato paste
- 1/2 cup water, or broth
- 3 Tbsp taco seasoning, homemade or store-bought
- 8 taco shells or small tortillas
- shredded lettuce
- diced tomatoes or pico de gallo, and jalapenos for spice
- shredded cheddar, or Mexican blend cheese
- guacamole, or sliced avocado

Instructions
- Make taco seasoning: Stir together all your seasoning ingredients in a small bowl if making your own, or measure out 3 Tablespoons if using store-bought.
- Brown beef: Heat a large skillet over medium-high heat, add ground beef, and cook until mostly browned, about 4 minutes.
- Add onion & garlic: Stir in diced onion and cook for 3 to 4 minutes until softened, then add minced garlic and cook for 30 seconds until fragrant. Spoon off excess grease if necessary, leaving about 1 tablespoon.
- Add seasoning and tomato paste: Mix in 3 Tbsp taco seasoning and 1 Tbsp tomato paste, stirring well and cooking for 1 minute until beef is coated.
- Add water and stir to combine: Reduce heat to medium-low and simmer uncovered for 3-4 minutes, stirring occasionally until the mixture is juicy and lightly saucy.
- Warm the shells: Warm taco shells or tortillas and fill each with taco meat, adding your favorite toppings.
