Ingredients

Scale
  • ½ tbsp olive oil
  • ½ onion finely chopped
  • pinch of salt
  • 1 lb. ground beef
  • 4 tbsp taco seasoning divided
  • ¼ tsp cayenne pepper optional
  • 1 cup uncooked rice
  • 1 tbsp taco seasoning
  • 6 burrito-sized tortillas
  • ¾ cup nacho cheese
  • 3 cups flamin’ hot fritos
  • 2-3 cups shredded quesadilla cheese divided
  • creamy chipotle sauce
  • sour cream

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add finely chopped onion and a pinch of salt. Cook until softened.
  3. Incorporate ground beef and 3 tablespoons taco seasoning; cook until browned and drain excess grease.
  4. Prepare rice according to package directions, adding 1 tablespoon taco seasoning and cayenne pepper to the water.
  5. On each tortilla, spread a couple of tablespoons of nacho cheese. Layer in ⅓ cup ground beef, ¼ cup rice, a couple tablespoons of shredded cheese, and drizzle with creamy chipotle sauce. Top with Flamin’ Hot Fritos.
  6. Fold the bottom half of the tortilla over the filling, tuck the bottom edge underneath, and fold the sides to roll tightly into a burrito.
  7. In a skillet over medium heat, sprinkle a couple of tablespoons of shredded cheese in the center, about the length of the burrito.
  8. Place the burrito seam side down over the cheese and roll it in the cheese as it melts, cooking until all sides are browned and crispy.
  9. Serve with sour cream and salsa if desired.

Notes

Feel free to add your favorite vegetables to the filling for an extra crunch.
You can adjust the spiciness by modifying the amount of cayenne pepper.
For a vegetarian option, substitute ground beef with black beans or lentils.
