Ingredients

Scale
  • 4 medium chicken breasts, fresh is best, if frozen they need to be broken apart and small
  • 1 pkg fajita seasoning, 2 oz, or taco seasoning
  • 16 oz salsa
  • 2 large bell peppers, red and green sliced thick + 1 onion if desired

Instructions

  1. Chop onion and bell peppers into large chunks.
  2. Place chicken breasts at the bottom of the pot (if breasts are unusually thick and large, cut them in half first). Sprinkle meat with fajita seasoning.
  3. Put onion and bell peppers on top of the meat, then pour the jar of salsa over everything.
  4. Cover and cook on low heat for 6 hours or until the meat slices and/or shreds easily. Serve inside tortillas with sour cream and cheese!

Notes

For extra flavor, marinate chicken in fajita seasoning for an hour before cooking.
Serve with your favorite toppings like avocado, jalapeƱos, and cheese.
This dish keeps well in the fridge for leftovers, making it great for meal prep.
