  • Prep Time 20 minutes
  • Cook Time 55 minutes
  • Yield 5 servings 1x

Ingredients

Scale
  • 2 lbs. chicken thighs (boneless & skinless)
  • ½ Tbsp salt
  • 2 Tbsp honey
  • ¼ cup Greek yogurt
  • 4 garlic cloves (minced)
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 lemon
  • 2 Tbsp vegetable oil
  • 1 Tbsp soy sauce
  • 1 tsp black pepper (freshly cracked)
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 large yellow onion

Instructions

  1. Gather ingredients and cut lemon in half, reserving half for wedges to serve.
  2. Trim chicken thighs of extra fat and cut into 2-3 inch pieces.
  3. Sprinkle chicken with ½ Tbsp salt and toss. Let sit for 20 minutes while preparing the marinade.
  4. In a mixing bowl, combine honey, Greek yogurt, minced garlic, oregano, smoked paprika, juice of ½ lemon, vegetable oil, soy sauce, and black pepper; whisk to combine.
  5. Pour marinade over salted chicken and toss. Marinate for 20 minutes or up to 2 hours covered in the refrigerator.
  6. If using wood skewers, soak them in warm water while the chicken marinates.
  7. Seed and cut bell peppers into 2-inch pieces and cut onion into similar-sized pieces. Quarter the remaining half of the lemon.
  8. Preheat grill to 450℉. Assemble skewers, starting with veggies and alternating ingredients. Avoid crowding the skewers.
  9. Brush skewers with extra marinade.
  10. Place skewers on grill without overcrowding. Grill for 7-8 minutes without moving them to achieve grill marks.
  11. Flip kabobs after 7-8 minutes, turning 2-3 times overall.
  12. Check if chicken is done using a meat thermometer, which should read 165℉ when inserted into the thickest part. Serve with lemon wedges.

Notes

For extra flavor, marinate the chicken for longer if time allows.
Ensure the grill is preheated to achieve the best sear on your kabobs.
Serve with a side of rice or salad for a complete meal.
