Ingredients

Scale
  • 6 cups cherries stemmed and pitted (if you have more cherries, use them!, up to 8 cups)
  • 1 1/2 tablespoons lemon juice
  • 2 teaspoons cornstarch
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 1/4 cups yellow cake mix (just the mix!)
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 6 tablespoon chilled butter

Instructions

  1. Preheat the oven to 425 degrees.
  2. Remove the stems and seeds from all cherries.
  3. In a large bowl, combine cherries, lemon juice, cornstarch, brown sugar, white sugar, vanilla, and cinnamon. Mix gently to combine and then pour the cherry mixture into a skillet or a 2-quart baking dish.
  4. In another bowl, mix the yellow cake mix, brown sugar, salt, and baking powder. Stir well. Add chilled butter and cut it into the mixture with a pastry blender or fork until it resembles coarse crumbs.
  5. Spread the crumb topping evenly over the cherries. Bake in the preheated oven for 25-35 minutes or until the topping is golden brown and cherry juices are bubbling.
  6. Serve hot, or allow to cool and enjoy later, especially delicious with vanilla ice cream or whipped cream.

Notes

For a sweeter cobbler, adjust the sugar to taste.
Serve with a scoop of ice cream for an added treat.
Leftovers can be refrigerated and reheated easily.
