Ingredients

Scale
  • 16 ounce can refried beans
  • 3/4 cup plain whole milk Greek yogurt or sour cream
  • 1/2 cup salsa
  • 4 ounce can diced green chiles
  • 1 teaspoon chili powder
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 2 cups shredded Colby Jack or Monterey Jack cheese
  • Sliced green onions and cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 375° F and spray an 8×8 or similar sized baking dish with cooking spray.
  2. In a large mixing bowl, warm the refried beans in the microwave for 30-45 seconds to soften them for mixing.
  3. Combine the Greek yogurt, salsa, diced green chiles, spices, salt, and half of the cheese with the refried beans. Mix until fully blended.
  4. Pour the mixture into the prepared baking dish and sprinkle the remaining cheese on top. Cover with foil and bake for 15 minutes.
  5. Remove the foil and continue baking for another 5-10 minutes, until the cheese is melted and the dip is bubbling.
  6. Garnish with sliced green onions and cilantro before serving. Enjoy it with tortilla chips, crackers, or fresh veggies.

Notes

For a spicier dip, add extra diced green chiles or jalapeños.
This dip can be prepared ahead of time and baked just before serving.
It pairs well with a variety of dippers, including veggies and chips.
