Ingredients

Scale
  • 3 tablespoons unsalted butter, divided
  • 1¼ cups whole milk
  • 2 large eggs
  • 1 cup all purpose flour
  • ¼ teaspoon sea salt
  • 1 medium lemon, zested and juiced
  • ½ cup fresh or frozen blueberries

Instructions

  1. Preheat the oven to 425℉. Generously grease a popover tin with 1 tablespoon of melted butter and set aside.
  2. In a blender, combine the milk and eggs until mixed well. Add the flour and salt, and pulse to combine. Then, add the remaining melted butter, lemon zest, and juice, and pulse again until smooth. Fold in the blueberries.
  3. Pour the batter into the greased popover tin, filling each cup ⅔ to ¾ full. Position the tin in the center of the oven and bake for 35 to 40 minutes without opening the oven door.
  4. Once done, the popovers should be golden brown and light. They will have a crisp exterior and a soft, chewy interior. Serve warm.

Notes

For best results, do not open the oven while baking to allow the popovers to fully rise.
Feel free to experiment with other fruits like raspberries or blackberries.
These popovers are best served fresh out of the oven.
