Ingredients

Scale
  • 32 oz. refried beans (2 cans)
  • ½ cup salsa
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • pinch of salt and pepper
  • 1½ cups shredded quesadilla cheese
  • 8 10-inch tortillas
  • olive oil
  • salsa
  • sour cream
  • guacamole
  • chopped cilantro
  • lime wedges

Instructions

  1. Heat the beans in a saucepan over medium heat, stirring until smooth. Mix in salsa, chili powder, garlic powder, onion powder, salt, and pepper, cooking for 3-4 minutes until warmed through.
  2. To soften the tortillas, place them between damp paper towels and microwave for 30 seconds. Add about ⅓ cup of cheese to the tortilla center, then top with ½ cup of bean mixture.
  3. Fold the tortilla: Bring the bottom half up over the filling, tuck the edge under, then fold the sides in and roll tightly into a burrito.
  4. In a skillet, heat 1 tablespoon of oil over medium heat. Cook 1-3 burritos at a time, turning until golden brown on each side.
  5. Serve the burritos with your choice of salsa, sour cream, guacamole, cilantro, and lime wedges.

Notes

For added flavor, consider adding jalapeños or diced bell peppers to the bean mixture.
You can use any type of cheese you like, such as cheddar or Monterey Jack.
These burritos can be made ahead of time and frozen for a quick meal later.
