Ingredients
Scale
- 1 ¼ cups (163g) all-purpose flour (divided)
- ½ teaspoon salt
- ½ cup (112g) unsalted butter (cold, cut into ½ inch cubes)
- 2-4 tablespoons ice water
- ½ cup (104g) granulated sugar
- 2 tablespoons (16g) cornstarch
- ½ teaspoon salt
- 1 ¾ cups (420ml) whole milk
- 1 ¼ cups sweetened condensed milk (one 14 oz can)
- 2 large eggs (room temperature)
- 2 large egg yolks (room temperature)
- 1 tablespoon vanilla extract
- 5 tablespoons (70g) unsalted butter (cold and cubed)
- 3-4 large bananas
- 45-50 nilla wafers
- 1 cup (240ml) heavy whipping cream (cold)
- 4 tablespoons (29g) powdered sugar
- ¾ teaspoon vanilla extract
- Additional Nilla wafers (optional)
- Additional banana slices (optional)
Instructions
- Begin by preparing the crust. In a food processor, combine 3/4 cup of flour with salt, pulsing a few times to mix.
- Add cold, cubed butter to the flour and pulse until a crumbly dough forms, ensuring the flour is well-coated.
- Mix in the remaining flour until evenly distributed and sandy in texture. Avoid large pieces of dough.
- Transfer to a mixing bowl, add 2 tablespoons of ice water, and gently mix until clusters form. Add more water if necessary until the dough holds together.
- Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least an hour or up to two days.
- Prepare to bake by rolling out the pie crust on parchment paper and draping it over a pie plate. Prick the crust with a fork to allow steam to escape.
- Chill the crust for 2-3 hours or freeze for 20 minutes before baking.
- Preheat the oven to 350°F (180°C) and line the chilled crust with parchment paper filled with weights. Bake for 20-25 minutes until browned at the edges, then remove weights and bake until golden brown, about 5-10 minutes.
- Let the crust cool completely before proceeding with the filling.
Notes
Make sure the butter for the crust is very cold for best results.
The pie can be topped with extra banana slices and Nilla wafers before serving for added texture and flavor.
For a creamier filling, allow the pie to chill in the refrigerator for a few hours before serving.
