Ingredients
Scale
- 1 pound ground beef (80/20)
- 1/2 cup white onion (diced)
- 2 tablespoons tomato paste
- 1 packet taco seasoning
- 1/4 cup water
- avocado oil spray (as needed)
- 8 flour tortillas (8-inch)
- 2 cups Mexican cheese blend (shredded)
- 1/2 cup sour cream
- 2 tablespoons pickled jalapeño brine
- 1/4 cup pickled jalapeños
- shredded lettuce
- diced tomato
- fresh cilantro
- fresh jalapeño (sliced)
- pickled red onions
- lime wedges
Instructions
- Heat a large skillet over medium heat.
- Add ground beef, breaking it into small crumbles, and cook until halfway browned, about 4-5 minutes.
- Add the diced onion and continue cooking until beef is fully browned and the onion is soft, approximately 3-4 minutes.
- Drain excess grease from the skillet.
- Sprinkle taco seasoning over the beef and stir to coat, then push the beef to the edges of the pan.
- Add tomato paste to the center of the pan and cook for 30 seconds to darken. Stir it into the beef.
- Pour in water and let it simmer for 2 minutes until the sauce thickens.
- Preheat your oven to 400°F and spray two large baking sheets with avocado oil spray.
- Lay tortillas flat in a single layer on the baking sheets without overlapping.
- Sprinkle a small amount of cheese on each tortilla, then spoon beef over the cheese, and top with remaining cheese.
- Bake in the preheated oven for 12-15 minutes until the cheese is melted and the tortilla edges are golden brown; monitor closely during the last 2 minutes.
- While tacos are baking, blend sour cream, pickled jalapeño brine, and pickled jalapeños until smooth.
- Once fully baked, fold each taco in half while the cheese is still hot and press down with a spatula to seal.
- Drizzle the tacos with the jalapeño sour cream mixture and add preferred toppings before serving.”
Notes
You can adjust the amount of jalapeños in the sour cream for your desired spice level.
